New Years' Day was spent relaxing. We had a slow start, and during that slow start we played Wii and continued to raise our scores in the shooting competition(I totally outgun Cora). Then we started a load of dishes with the idea of making a batch of chili. We then went to town to buy a Rubbermaid Tote...in holiday colors, no less! And we looked around and shopped and looked around and finally ended up at the bookstore after eating lunch at a Mongolian BBQ. Cora insisted on buying some underpriced books and I managed to convince her that I should buy a starter kit for Axis and Allies. We finally came home and I decided to smoke some cheese. I have been planning this for a few days now.
I started with Hickory. As I was tending my cheese, my dad called and asked me if I would like any Apricot chips to smoke with. I said, "Heck Yeah!" And I met him half-way between the houses and we traded. I gave him a small bag of Hickory to try and he gave me a big bag of Apricot. I raced home, since my cheese was still on. I took it off and thought the cheese was perfect...except for the Pepper Jack...which I put back on for a couple more hours...but this time I used Apricot...WOW! After I finally got the fire started(it wasn't easy), it smoked like a 1950's movie star!
The Apricot Smoke is rounder (for lack of a better term) than the hickory, and it is mellower, but mix the two and you have a very nice mix and the cheese came out tasting...ummm, YUMMY! Tomorrow, I am going to go ot to the shed and sacrifice a log of Oak and a chunk of Apple to my Cheese love. I will keep you posted!
Did I mention how EASY it is to smoke your own cheese? I just use my BBQ...and it is a CHEAPY! I even manufactured a can to light my fire in. I poked some holes in the bottom and it works nicely!
The Chili was good! Especially after I remembered to add a touch of molasses and spices.
So, it was a very good day! Oh, and the shopping? I think everyone was recuperating from the holidays...no one was out. The stores were practically deserted!

I wish I was there to taste some of that smoked cheese..
So when you smoke cheese, do you use matches, a bic, or one of those bbq grill lighters to light the cheese?
I mean, I've heard of cutting the cheese, but smoking the cheese? Is that legal in your state?
If I spent as much time as you do on that game I would be smoking you instead of cheese. Oh and I am so glad you have a can to light your fire in :0)
